Just Another Day........

Another day in Kansas. But a very nice one. Not too hot. Not too cool. Ahhhhhhh, just right. And had some time to myself, as a friend came and got our grandson to take to the pool with her grandson for a couple of hours. So, I worked on the computer while they were gone - got my webcam set back up so I can see my grandbaby in California.....and maybe the other grandkids. :) This technology stuff is amazing. Too bad we didn't have as much of it when we were still living in France..........we could have SEEN and kept in touch so much easier with our friends and family here in the states

Another reason it's such a nice day: not much fibromyalgia pain today. THAT is nice any day. :) That can change from hour to hour, but so far, so good. I sometimes wonder: was there really a time in my life when I did NOT live with pain? Surely, there was; but when you've lived with it for so long, you tend to forget how it must have felt without it. Though I told a friend on the phone this afternoon, "I'd rather put up with the fibro pain and symptoms than to have to go through a lot more serious things that people have." We can always look and find someone worse off than we are.

Thought I might throw in a recipe here. Here's a tasty chicken recipe for all you chicken-lovers. It's Haitian, but much like a French recipe I use often:

EASY CHICKEN CREOLE (serves 4)

one clove crushed garlic
1 large onion, chopped (about 1 cup) 1/2 tsp salt
3/4 cup diced green pepper (one medium) 2 cups cubed cooked chicken
3 Tblspns oil 1/4 tsp sugar
1 can tomato paste fresh ground pepper
1/4 tsp. hot pepper sauce (or pepper flakes) hot cooked rice
2 1/4 cups chicken brother

...in large skillet, saute onion, green pepper and garlic in oil until tender , stirring some
...add flour - cook and stir just until flour starts to brown
...stir in tomato paste, broth, salt, sugar and pepper sauce
...cook and stir until mixture comes to boil and thickens
...simmer uncovered minutes, stirring occasionally
...stir in chicken and season with ground pepper
...heat until good and hot
...serve over the hot rice
